Spring Mixed Red Caper Ginger Sesame Salad

Ingredients:

1 portion Spring Mixed Salad Greens

½ cup Jicama, shredded

½ cup pepper (red, yellow and green), shredded

½ cup Sesame Dressing

½ tsp Wasabi Bean

½ tsp Roasted Soy Beans

1 tsp Raisins

¼ tsp Crispy Leeks or Deep Fried Asian Rice Noodles (or mix of both), optional

1 tsp Red Capers (soak ½ hour before using)

Procedure:

1. Put the salad and vegetables into a mixing bowl and toss with dressing.

2. Place on a plate.

3. Sprinkle with the dry beans, raisins and leeks/rice noodles. Top with the red capers.

4. Enjoy!

Ginger Sesame Dressing:

4 Tbsp   Sugar

½ Cup   Rice Vinegar

¼ Cup   Lemon Juice

1 Tsp     Salt

6 Tbsp   Sesame Paste

½ Tsp    Sesame Oil

2 Tbsp   Toasted and Ground White sesame seeds

2 Tbsp   Chicken Broth

1 Tbsp   Pickle Ginger

Put all the ingredients into blender and puree until the dressing becomes smooth.
