Asian Potato Latke

Ingredients for large groups:

10 lb       Potatoes, peeled, chopped, boiled then drained

1 qt.        Heavy cream

1 qt.        Italian seasoned bread crumbs

½ cup     Fresh ginger, chopped

1 cup      Fresh cilantro, chopped

dash       Salt & Pepper

1 Tbsp    Butter

Ingredients for smaller groups:

2-1/2 lbs.    Potatoes

½ pint        Heavy cream

2 cups       Italian seasoned bread crumbs

¼ cup        Fresh ginger, chopped

½ cup        Fresh cilantro, chopped

dash          Salt & Pepper

1 tsp.         Butter

Procedure:

Dry all ingredients.  Put all ingredients in mixer for approximately 2 minutes until well-mixed. If you feel mixture is still wet, add more bread crumbs. Let mixture sit in uncovered bowl on counter for 1/2 hour. Then make 1” ball and pan-fry it in Teflon pan (with no oil).
