Spring Mixed Red Caper Ginger Sesame Salad

Ingredients:

1 portion                Spring Mixed Salad Greens

½ cup                   Jicama, shredded

½ cup                   pepper (red, yellow and green), shredded

½ cup                   Sesame Dressing

½ tsp.                   Wasabi Bean

½ tsp.                   Roasted Soy Beans

1 tsp.                    Raisins

¼ tsp.                   Crispy Leeks or Deep Fried Asian Rice Noodles (or mix of both), optional

1 tsp.                    Red Capers (soak ½ hour before using)


Procedure:

1. Put the salad and vegetables into a mixing bowl and toss with dressing.

2. Place on a plate.

3. Sprinkle with the dry beans, raisins and leeks/rice noodles. Top with the red capers.

4. Enjoy!
