Chef Poon’s appearance and demo schedule continues to be heavy this year. 

Chef will be taking a hiatus and there will be no scheduled hands on cooking classses for at least the first half of 2015. 

His Wok ‘N Walk Tours will continue so you can still have fun with Chinatown’s Chef Poon!

When classes resume, each one-session class includes hands-on instruction and a  meal. If time allows, enjoy a walk with Chef Joe to the Fortune Cookie Factory and/or the Asian grocery store, to learn about the unique ingredients needed to prepare the dishes at home.

Limited to 12 students per class.

Registration requires a $30 deposit. Balance due for class is payable  at time of class (see below for forms of payment).  Payment accepted by  CASH OR CHECK  on day of class.  *BYOB*

Dim Sum

Cost: $79 Per person

Students in this hands-on class will learn to make 3 kinds of wontons (American, Shang Hai and Hong Kong), 6 types of dumplings (Shark’s Fin, Vegetarian Tofu and American Pork & Shrimp, Peking, Tinjin Cabbage, Asian Chive ) as well as Shi Mai and Quail Egg Shi Mai.

Day-time students will receive a full lunch including Wonton Soup, Red Caper Spring Mixed Salad with Sweet Garlic in Ginger Sesame Dressing, Assorted Dim Sum Sampler, Ginger Carrot Cake in Mango Coulis with Green Tea Ice Cream. Evening students will receive a full dinner including Wild Phillips’ Kennett Square Mushroom Consomme`, Spring Mix Salad, Dim Sum Sampler, Black Sesame Seed Oreo Cookie Cheesecake with Strawberry Coulis.

The trip to the Asian Grocery Store will focus on how to purchase Asian cooking herbs, shark’s fin ($269.95 per lb.), Abalone ($269.95 per lb.), Peking duck and Pad Thai sauce, fresh fish and 100 different kinds of Asian anchovy. Master Chef Joe Poon will amaze students with facts about the secrets of Asian vegetables, including which are best for preventing heart disease and arthritis.

Special Combination Class – Popular Asian  Stir Fry Dishes and Noodle Class

Cost: $120 Per person

Cook with Chef Poon in a commercial kitchen! In this hands-on class students will learn the fastest and healthiest way to cook — stir fry. Learn to make a stir fry dish in Chef Poon’s Chinese Wok Station within 5 minutes including all sorts of fresh vegetables from the Asian supermarket.  Chef Poon will teach Chinatown restaurant cooking techniques in his open commercial wok station.

You’ll be using secret seasonings.  You will cook without MSG.  You will learn to make sauces such as XO sauce, white sauce and white ginger garlic sauce, white wine sauce and also white saffron or curry sauce.  You will also learn how to make various types of brown sauce from the basic  sauce learning  how you can make spicy garlic ginger brown sauce, or black bean sauce, and kung pao sauce all based on the basic brown sauce recipe.

You will also learn about the secret art of Chinese noodle-making, including gluten-free noodles.  The selection will be comprised of Needle Noodles, Chow Fun noodles, pan fried noodles, Lo Mein noodles and Singapore noodles, as well as Har Moon and Shanghai noodles. Some of these will be featured in the stir fry dishes you learn to make.

Throughout the event, students will taste and enjoy all of their culinary creations; in addition, there are always lots of “doggie” bags to take home.  BYOB, if you like. This is a terrific class for vegetarians, too!

Class includes a trip to the Asian Grocery store to learn about ingredients, herbs and their uses. Chef Joseph Poon will show students how to purchase the ingredients needed to make the dishes and will amaze students with facts about the secrets of Asian fruits, vegetables, herbs, and, of course, noodles. Recipes will include shrimp, chicken, beef  or seafood.

Sushi Making – Weekend and Friday night classes are our most popular!

Cost: $120 Per person

Students in this hands-on class will learn how to wrap a sushi roll, use a sushi knife, cook Japanese rice, prepare Japanese hot sauces and more. Chef Joe Poon will lead a shopping expedition to an Asian Grocery Store, where students will learn about purchasing the ingredients they will need to make sushi at home. Each student will take home two big boxes of sushi.

Students will receive a full lunch or dinner including Gogi berry spring Mix healthy salad with creamy sesame tangy dressing, lobster with fresh mango in french philo dough, crispy Peking duck with scallion and jicama, and vegetarian spring roll appetizers.

Entrees include beef tenderloin medallion with artichoke and Japanese eggplant in spicy garlic demi glace essence, vegetarian avocado dragon roll, and crispy General Joe chicken with pad Thai noodle served with Asian baby greens followed by sesame oreo cookie cheese cake with fresh fruit and green tea ice cream and healthy green tea.

Double Happiness: Sushi  & Dim Sum Making

Cost: $120 Per person

Two classes for the price of one! The Secret of Making Peking Duck – offered several times throughout the year.

Cost: $120 Per person

Students will learn how to make Chef Joseph Poon’s famous Peking Duck, along with pancakes for wrapping the delicacy, and the scallion flower used for garnishing. The class includes a trip to the Asian Grocery Store and a Peking Duck house.

Students receive a full meal including Peking Duck Salad. Appetizers: Peking Duck Foie Gras with Cilantro, Scallion Bread in Tangy, Chili Soy Sauce, Peking Duck Polenta and Peking Duck Sushi. EntrÈes: Roast Duck with Lemon Pepper Linguini and Asian Fusion Rice followed by Ginger Carrot Cake with Fresh Fruit and Green Tea.

Cooking Classes for Kids with Adults

Cost: $45 per adult / $39 per child

These fun classes are for children with adults. Chef Poon will have the students laughing and smiling while they learn to make dim sum. Each student will get the ingredients and different wrappers to make his/her own dim sum. Students will learn how to wrap three different types of wontons (American, Shanghai and Hong Kong ) and to make shi mai, quail egg shi mai and a variety of dumplings. Include hands-on dim sum making. Dim sum is Cantonese for “heart’s delight” and includes a variety of small, mouth-watering dishes, which can be served any time of the day and are standard fare in teahouses. After learning to make dim sum, the students can sit and savor their creations. Then, Chef Poon takes the group to the Asian grocery store or Fortune Cookie Factory for a look and taste!
